You play the strings of a guitar by plucking them; in effect, you stretch them and create elastic potential energy, and then release them, which converts the potential energy into kinetic energy which we perceive as sound.
This here is my guitar, and basically the way it works is that the strings store elastic potential energy whenever it is pulled back by the finger, and when they are released the potential energy turns into kinetic energy by vibrating.
